The Great British Bake Off Season 16 Episode 7: Highlights from Meringue Week's Signature Challenge

The latest The Great British Bake Off Season 16 Episode 7 started with the judges and show hosts revealing the Signature Challenge. Bakers were asked to make mini meringue pies.

"Now, for your Signature Challenge today, the judges would love you to make 12 mini Meringue pies. Your pie should be made with a buttery shortcrust pastry with a tasty filling and an exquisite meringue topping," announced the hosts.

The bakers, Jasmine, Lesley, Iain, Tom, Aaron, and Toby, were given two hours to complete the challenge.

As the bakers got started with their pie preparation, judge Paul Hollywood spoke to the cameras about the challenge, noting that the bakers could choose from various types of meringue, such as Swiss, Italian, and French.

"For me, the perfect meringue pie has a really crisp pastry," shared Prue Leith.

The Great British Bake Off noted that bakers could add their choice of fillings. Obvious options included fruit or curd, but they could also choose frangipane or set custard. She cautioned that the filling should not be "too gluey," adding that it was a small detail but very difficult to perfect.

While the pies baked, the bakers worked on their fillings and toppings. With fifteen minutes left, they assembled their pies.

• Toby's Apple Lattice Meringue Pies.

After the challenge ended, the judges tasted the pies. They praised Tom's pies, noting they were not too sweet. Lesley received appreciation for her lemon curd, which Prue described as "absolutely delicious," though Paul mentioned the pastry could use a bit of work.

When tasting Jasmine’s pies, Prue exclaimed,

"Absolutely perfect," reacted Prue Leith.

She highlighted the crispiness, the strong passion fruit flavor, bits of raspberry, and the creaminess of the meringue. After Paul also enjoyed Jasmine’s pies, she received a handshake from him.

While Paul appreciated Aaron's pies for taste and sweetness, Prue suggested they needed a bit more chestnut, though she noted the combination was lovely. Regarding Iain's Lucky Rhubarb Meringue Pies, Prue acknowledged the difficulty in making them but said everything "went really well together."

"Really well. It's lovely," Prue said.

Judges described Toby's pies as lovely and sharp. Prue appreciated the pastry and meringue, and Toby also received a legendary handshake from Paul Hollywood.
